Paleo Cucumber Sunrise Cocktail, A Refreshing Fresh Juice Drink

So I am headed off to Chicago today for work and its going to be a quick up and back (literally coming home tomorrow). I wish I had more time to hang out in the city, I really love Chicago…its one of the few places I would move to. And I would have loved to have had Angel come too – I’ve never been there with him and I’m sure we’d have a blast with all of the restaurants there!! Oh man, I hope I get to go to at least one really great food place that I can share!

But anyway…So I’ve been waiting to post this beverage for a while, which is based off something we had at The Rooftop Bar in Jacksonville. It was so light and refreshing, and perfectly balanced. It is just perfect for a breakfast or brunch, or as a cocktail in the evening. But I also love that this drink tastes just as good without the alcohol, so if you don’t imbibe, just leave it out.

Cucumber Sunrise

2 cups Pineapple Juice

1 cup Orange Juice

1 cup Cucumber Water

12 Cucumber Slices

Optional: 1 cup Gin*

Optional: Ice

*We prefer more botantical gins, like Nolet or Farmer’s. If you feel uneasy about drinking alcohol, check out our Paleo Alcohol Guide for more info!

Combine the pineapple juice, orange juice, cucumber water, gin (if you are using it) and ice and shake thoroughly. Stain into 4 glasses and garnish with 3 cucumbers per glass.

Makes 4 Drinks
